Yummy Gluten Free Chocolate Chip Cookies!

There is nothing like fresh baked cookies coming out of the oven, am I right?!


I have been baking cookies for as long as I can remember! I’m sure that is true for most of us! Some of my favorite memories are baking with my mom. She was always so patient and provided such an opportunity for me to feel like I was asserting my independence while we made the dough and then baked the cookies. And now, I am passing along those same traditions to my daughter. My 4 year old loves to be in the kitchen. And especially loves to bake cookies! She asks to do it almost every day. Thanks mom! Lol.


In all seriousness though, with all the hardships going on, I welcome an activity that brings joy. It is something I look forward to doing with my daughter. It is good for our relationship, good for following directions, good for working with numbers, and so much more. I love my daughter with my whole heart, but she is very, very strong willed and “knows everything” (her words, not mine!). So, the ability to teach her much academically these days has been minimal at best. So I have had to take on the mentality that we will be focused on life skill teaching as opposed to academic teaching. And it seems to be working out alright for our family! Although the “Quarantine 15” might beg to differ how good it is working out for me haha!


I have been gluten free since college. My dad has Celiac Disease and I tested positive for Gluten Intolerance a long time ago. I definitely feel much better when I am adhering to a Gluten Free diet, and that especially goes for when I am indulging in treats! When I first started eating gluten free, there were minimal products on the market that made food items taste like the “regular” items. Thankfully, that is not the case nowadays. I have been baking these cookies gluten free for some time now and people have never noticed that they are gluten free! Bob’s Red Mill has great Gluten Free flour. It is 1-to-1 Baking flour and it is awesome (note this is NOT a paid advertisement, I just really enjoy their products).


In the chocolate chip cookies I bake, I like to add an extra splash of vanilla. I also add in extra chips of some kind - mini chips, peanut butter chips, etc. In my opinion, it just makes the cookies taste a little richer. I also like to under cook them a tad because I like my cookies on the softer side. So the time in the oven will reflect a softer cookie as opposed to crunchy. Lastly, sometimes I add a little sea salt … it just depends on my cookie making mood!


So with that being said, I’d love to share the recipe that strengthens the bond between my daughter and me and provides a delicious end result ;).



  • 2 1/4 cups Gluten Free Baking Flour

  • 1 tsp Baking Soda

  • 1 tsp Salt

  • 1 cup Butter Softened - Not Melted

  • 3/4 cup Sugar

  • 3/4 cup Brown Sugar packed

  • 2 tsp Vanilla Extract

  • 2 Eggs

  • 2 cups Chocolate Chips

  • 1 cup Additional Chips (mini chips, peanut butter chips, etc - your choice!)

  • Sprinkle of Sea Salt


  1. Preheat oven to 375°F.

  2. Line baking sheet with parchment paper.

  3. Mix flour, baking soda and salt in a small bowl. Set aside.

  4. Beat butter, sugar, brown sugar and vanilla extract in a large bowl until just creamy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture and beat until well-blended.

  5. Stir in chips.

  6. Scoop or roll dough into balls, about two tablespoons each. Place 2 inches apart on prepared baking sheets.

  7. Let rest, chilled, for 30 minutes.

  8. Bake for 8-11 minutes or until golden brown.

  9. Sprinkle with sea salt (if desired)

  10. Let cool on a wire rack.
